This chocolate is the first of its kind as it is made with cocoa from Madagascar. Since Madagascar produces some of Africa's best cocoa, the cocoa grown there is in high demand and is rather rare. Therefore, this chocolate is made with a blend of Trinitario and Criollo cocoa that is gently roasted and briefly conched in the Bean-to-Bar manufactory, so that all the flavours of the cocoa are slowly revealed. A slight sweetness from the raw cane sugar used in the recipe rounds out the flavour.
