It's impressive how many fascinating and exciting wines this area has produced over the last decades. Grassnitzberg wines have a clear sign of recognition: they are cool, vibrant, salty, sometimes delicate, and always serious with a lot of development potential.
Why are the wines of this region so salty and cool? On the one hand the east-facing vineyard receives morning and midday sun, on the other hand a mighty forest belt surrounds the vineyard. The saltiness comes from the soil: the vines grow in loose, sandy limestone soils. The wine is fermented without the addition of yeast in large wooden barrels and ripens after several months.
Once in the glass, an exciting sensory adventure begins:
First you smell limestone, then yellow raspberries, preserved lemons and green apples. The wine needs air and a large glass, and only then begins to reveal its flavor. The typical Grassnitzberg cassis notes evolve only with bottle age.
The wine is cool and refreshing on the palate, and has exciting notes of saltiness that help with digestion. Afterwards you taste a lot of citrus freshness.
Fantastic with raw, marinated fish or tasty vegetables.
