This exciting wine with a distinctive label does not match the other Tement wines. This is because this particular Sauvignon Blanc comes from the neighboring country of Slovenia. The wine is grown directly on the best location of the Zieregg vineyard. In Slovenia, Zieregg is called Ciringa. Since 1919, the vineyard, found on clay and limestone soils, has produced excellent wine because of these conditions. Tement bought these vineyards after Slovenia joined the EU and exclusively planted Sauvignon Blanc here.
The wine is pressed and fermented in Slovenia, then expanded in the basement of the Tements Zieregg vineyard. The "Fosilni Breg", is a nod to the coral reef in the primordial ocean that gives the Zieregg soil its high calcium content. One of these fossils, a fossilized starfish, also adorns the label of the bottle.
Immediately after pouring you can smell red peppers, lemon and bay leaves. The limestone soil makes the flinty aromas noticeably smoky and sparse. The wine needs air to become spicier and polycyclic. The acidity is wonderfully juicy and brings vitality. This is no "fruit wine", but a highly elegant mineral accompaniment to fish and seafood.
