The flank steak goes perfectly with asparagus refined with Béarnaise sauce.
Preparation for water bath & frying pan:
Heat a pot of water on the hob shortly until it is at medium heat (ideally 65 ° C). Add flank steak in a sealed vacuum bag to hot water about 13 minutes. You may also use a steamer.
Remove the flank steak from the bag and dab with a paper towel
Fry each side in a pan with plenty of oil, short and spicy - let it rest
