Chicken fillet of Austrian reared chickens, cooked according to our sous vide method. Simply warm for 10 minutes in a water bath, then fry briefly in the pan in a little butter or vegetable oil until a light crust forms. Perfect.
Preparation for water bath & frying pan
Take a pot of water from the hotplate shortly before cooking (ideally 65 ° C) and in a sealed vacuum bag for about 10 minutes steep the fillet in the water bath (or in the steamer).
Remove the fillet from the bag and dab with a paper towel
Fry each side in a pan with plenty of oil, short and spicy - let it rest
