The base wine for this delicate, subtle rosé champagne comes from Pinot Noir and a little Blauer Zweigelt. The vines grow in Leutschach, very close to the Polz family's champagne cellar on beautiful Pössnitz mountain.
After pressing, the wine is fermented in old 2500 liter wooden barrels. Over the summer of 2011, the rosé was then pulled from the yeast for the second time, and the sparkling wine was poured into bottles. The sparkling wine is then matured for 3 1/2 years in the bottle. It is known for its beloved, typical yeasty notes.
The result can be seen, and tasted in the glass. One finds wild berry notes that mingle with refreshing red currant, as well as aromas that are reminiscent of dewy moss and the damp forest floor. The carbonation is very fine, delicate and refreshing. In the mouth you'll notice the slight taste of dried apple peels.
Perfect as an aperitif, solo, or paired with very fine, delicate raspberry desserts with chocolate.
