Krenschaumsuppe with crispy potato and bacon pastries

Ingredients soup

  • 200 g of floury potatoes
  • Grated 100 g Styrian horseradish
  • 100 g of butter
  • 0.7 l of beef soup
  • ¼ l whipped cream
  • 2 bay leaves

Ingredients pastry

  • 100 g of potatoes
  • 8 slices of bacon
  • Fat for roasting

Preparation of soup

  1. Wash the floury potatoes, peel and dice them. Then add beef soup, lettuce and bay leaves with the potato cubes in a saucepan and cook until soft.
  2. Add butter and horseradish and season to taste.

Preparation of pastry

  1. Peel the greasy potatoes and cut into very thin, noodle strips. Form small potato rolls and wrap them in a slice of bacon. Fix with a toothpick.
  2. Fry out the pastries in fat.

Garnish the soup with kitchen herbs and pumpkin seed oil and add a potato roll.

White poppy seed cake with cherry sauce

Ingredients casserole for 8 servings

  • 140 g white poppy seeds, ground
  • 140 g of butter
  • 140 g of granulated sugar
  • 40 g of milk
  • 40 g crumbs
  • 6 egg yolks
  • 6 egg whites
  • 2 bread rolls
  • vanilla sugar
  • Lemon peel, untreated

Ingredients cherry sauce

  • 600 g of cherries without stones
  • 2 cl of Cointreau or Cognac
  • 2 tablespoons honey
  • Sugar, as much as is desired
  • a little orange juice
  • a little lemon juice
  • some water


  1. Soak the bread rolls in hot milk.
  2. Then froth the butter with ⅓ of the sugar and the egg yolks.
  3. Beat the egg whites with the remaining sugar until it turns to snow.
  4. Now add the bread rolls to the yolk-sugar mixture, then fold in the snow and the poppy-seed mixture.
  5. Pour the mixture into a greased water bath dish sprinkled with granulated sugar and bake in a water bath in the oven at 200 degrees for about 45 minutes.
  6. In the meantime, boil all the ingredients for the cherry sauce in a pot and then bind with a spoonful of cornflour.
  7. Remove the casserole from the oven, place on a plate and serve with a dash of warm cherry sauce.
