Refined with organic elderberry juice concentrate
The basic product consists of organic raw milk. Matured in the vaulted cellar in combination with blue noble mold. The natural rind consists of red culture. The maturation period is 6-10 weeks and then the cheese is affined with so-called straw wine. The rich and sweet aroma of straw wine provide the highest culinary delights.
The straw wine:
Made by Schilcherweingut "Jöbstl". In autumn, the harvested grapes are carefully hung on cords to be well aerated for three months.
